Cheesy Prawn Fusilli

Cheesy Prawn Fusilli

Ingredients

250g Fusilli Pasta

400g Frozen prawns

250g courgettes finely shredded or thin cut into courgettie on a mandolin

200g Soft Cheese with Garlic and Herbs ( or just soft cheese and add your own garlic and herbs)

50ml Dry White Wine

Zest and Juice of a Lemon

Grated Parmesan

Chopped Chives

Method

Bring a large saucepan of Salted water to the boil  next, add the pasta and cook until not quite “al dente” then drain.

Put the Prawns, along with the shredded courgette , soft cheese, pasta, white wine and lemon juice into a saucepan and stir  gently until heated through.

Serve, sprinkled with Parmisan cheese, chopped chives and the zest of the lemon. Open a well chilled bottle of dry white wine ( Sevre et Maine would be perfect ! ).

Don’t forget some nice fresh bread to clean your plate with !
