It has been brought to my attention that I am not very kind to Vegetarians or Vegans. So I am taking this opportunity to point out that the only reason that I do not like Vegans or Vegetarians is that they do not taste very nice.... especially when they are spit roasted
Ingredients
1 Medium cauliflower
2 tsp smoked paprika
1/4 tsp garlic salt
1/4 tsp cayenne pepper
¼ tsp fresh ground black pepper
2 Tbsp olive oil
1kg sweet potatoes
50 grams salted Butter
Pinch of salt to taste
Milk if needed
A handful of walnut halves
1 Tbsp olive oil
75 gram grated cheddar cheese
METHOD
PREHEAT OVEN TO 200C
Break the cauliflower into small florets, place in a bowl and add the paprika, garlic salt, cayenne pepper, black pepper, and olive oil and mix well until the florets are all well coated. Tip the florets onto a baking sheet pour the remaining spice mixture over the florets and roast in the centre of the oven for 30 minutes.
In the meantime, peel the sweet potatoes and chop into cubes and boil until soft enough to mash. Drain the potatoes, return to the pan, add the butter and salt and mash until creamy (adding a little milk if needed).
Oil an oven proof dish add half of the potato to provide a 12mm layer on the bottom of the dish, then add the roasted cauliflower in an even layer. Fill the gaps in between the florets with the remaining potato. Place the walnuts halves randomly over the potato, brush everything with olive oil, sprinkle the grated cheese over the top and bake for 20 minutes until the edges of the potato are just starting to brown.
