Ingredients (Serves 2)
350 grams cold cooked potato
1/2 teaspoon sea salt
1/4 teaspoon black pepper
2 shallots (or a small red onion)
1 hardboiled egg
150 ml Nicole’s Dipping Sauce
Small bunch of finely chopped chives
Finely Chop the shallots and roughly chop the hardboiled egg and place to one side.
Chop the potato into 15 mm cubes. Next make the dipping sauce
Sauce Trempette à la Nicole (Nicole’s Dipping Sauce)
Ingredients
125ml Fromage Blanc
2 Tbsp. red wine vinegar
2 Tbsp. chopped chives.
Mix all the dipping Sauce ingredients in a large bowl then add the shallots, hardboiled egg, potato, sea salt and pepper. Mix all the ingredients well to ensure they are evenly coated, place in a serving dish, garnish with chopped chives and voila you have Potato Salad à la Nicole. As the name would suggest Nicole’s Dipping Sauce can also be used as a crudité dip.
