Traditional French style Mayonnaise..... ( so good you'll never want to buy factory made mayonnaise again ! )

Traditional  French  style  Mayonnaise.....    ( so good you'll never want to buy factory made mayonnaise again ! )

 Ingredients

1 egg

1 egg yolk

300ml Sunflower oil (or as much is needed for the consistency you require)

1 large teaspoon Dijon mustard   (this is optional if you don’t like mustard)

¼ Tsp salt

¼ Tsp pepper

1 teaspoon white wine vinegar

 

VERY IMPORTANT   All the ingredients must be at room temperature. If not you’ll end up with a bowl full of tasty fluid and but not mayonnaise

The real trick is to take your time and don’t add the oil too fast. If you do and the mixture separates and curdles. Don’t panic just add an egg yolk to another bowl and gently whisk your curdled mayo into it and that should rescue the mix 

Method

Place the eggs, mustard, vinegar, salt and pepper in a bowl and whisk well to combine them all together. Then start adding the oil  ( no more than a tablespoon full at a time) whisking well to ensure it is fully incorporated into the mix before you add the next tablespoonful. Keep on doing this until you have used all the oil and Voila you have your first home made batch of mayonnaise. This will keep for about two weeks in the fridge. It is a great base for all sorts of experimentation, Adding garlic, basil, mint, smoked paprika or anything that you like the taste of !
