Tuna and Butter Bean Salad

Tuna and Butter Bean Salad

 

Ingredients

(makes 2 main courses or 4 starters)

1 tin Tuna Chunks

1 tin Butter Beans

100 g Cherry Tomatoes

6 inches of Cucumber

1 small Red Onion

3 cloves Garlic

3 heaped tablespoons Mayonnaise

Salt to taste

Method

Drain and rinse the butter beans, dab them dry with paper towel and place to one side.

Quarter the tomatoes, cut the cucumber into small cubes. Mix the tomatoes and cucumber together, sprinkle with salt and place to one side.

Mince the garlic. Half then finely slice the onion.

Place everything (except the tuna) in a large bowl and mix well, ensuring that everything has an even coating of mayonnaise.

Drain the tuna chunks then gently fold the tuna into the salad until it is evenly distributed. Cling film the bowl and refrigerate for a couple of hours or until required
